Suggestions on meals and ways to cook for 2 on the road?

I am looking for recipes for my trucker and myself as I am on the road with him. Trying to find healthy foods that are easy to keep and cook on the go has not been easy! We do have a cooler to keep food, and as of right now we are using a skillet and crockpot! That means taking them in somewhere to wash at least twice a day! The newer truck we drive has a inverter that won't power the microwave :( Any suggestions? To meals or other cooking means would be much appreciated!

i don't ride with my husband, but i bought him a little mini "oven" and i buy disposable liners (you can find them at walmart, used a lot of times to bake breads in) and during the week i make him the same dinners i make for our family in them and freeze them, he has the plug in "cooler" as well and it normally keeps them frozen a few days. i also send him things like cottage cheese, string cheese, pickles, yogurt, drinkable yogurts, fried chicken (that can be eaten cold)cut up fruit, etc. my husband is normally home every weekend, so i restock every monday.
this week in his frozen meals he has tater tot casserole, chicken parmesan, and shepard's pie.

My husband and I are in a truck like your,s with no refridgerator just a cooler so "I feel your pain" lol. We tried dry ice which froze everything solid so I dont recommemd it.
We bring stuff to make sub sandwiches so theyre low fat anf buy canned fruit etc. we have our microwave plugged into an extension cord and we unplug it when not im use. We bring bags of salad to use the first day out. But I gotta admit we get burned out and succumb to fast food sometimes too :)

Its gotta be rough findimg somwhere to eash a skillet amd crock pot I bet!

I suggest crock pot liners or small oven cooking bags to line the crockpot with. That way you can just pull out the bag, throw it away and the crockpot is still clean. Also, there is a cookbook at Cracker Barrel that has recipes for crock pots that include no more than 4-6 ingredients. That would make grocery buying pretty simple. Good luck and enjoy!!
