I have just 3 hours of driving time left, I need 5 total to get to my destination,how many hours can I recoup by staying in the sleeper just 8 hours?

You would get whatever you have on your clock now then you would get the remaining of the 11 after a 2 hour break but ask your dispatcher. He knows for sure or look it up in your handbook.
